Practical advices - Wine and food recommendations

Distinguished and subtle, Cantemerle’s wine is not lacking in power. It accompanies many traditional local foods like cepes and roast poultry. Its delicate character also makes a satisfying match for finer river fish (pikeperch, char, trout) as well as shellfish like scallops and lightly sautéed crayfish tails.

With cheese, it’s best to avoid the too-salty blue types and instead choose pressed, raw-milk varieties like Reblochon, Saint Nectaire, Cantal, Ossau-Iraty and Manchego. As for the ever-popular Camembert from our Normandy region, a good cider would be preferable. Finally, if the meal concludes with dessert, a very young, fruity vintage of Allées de Cantemerle goes well with a Black Chocolate Parfait or a Hazelnut Tart.

In any case, the serving temperature should not exceed 19°C. It can even be brought to 16°C to accompany seafood and the dessert cart.

Les Allées de Cantemerle

With pride, this label adorns the property’s second wine, produced from its youngest vines. From the start, expressive aromas are evident, both fruity and floral; then, in the mouth the wine shows a mouth-filling richness which combines charm and tannic depth. This is a generous wine, full of zest, whose silky structure makes it very inviting. Serve it with a starter of creamed mushrooms in puff pastry, or with fresh goat’s cheese.

Deep color, peppery aromas, a fresh first impression, constant presence on the palate and a lively finish: all the qualities of the vintage are present here. Aromas of tobacco and black currant give good expression to Cantemerle’s terroir. This wine is full of promise, offering greater pleasure than one might expect from a second wine. The 2010 vintage is considered as one of the finest—indeed, the finest—of this new century in Bordeaux. This wine is proof of this, with silky tannins of great maturity, showing great finesse and elegance. This wine is still young, a bit reserved, with a noble structure which leaves a pure impression on the finish. It can continue to age, but is already marvelous with a blanquette or pot au feu…

This younger sibling of a classed growth clearly shows its family ties. With generous finesse it envelopes the mouth in fruit aromas, already offering great pleasure at so young an age.

If you take the time to transfer it to a carafe before serving the wine will start to show its best, especially when accompanying a family-style meal. A  true, typically-Médoc classic that is soft and easily approachable, it would not be difficult to make this your everyday wine.

As is often the case with Bordeaux’s 2008 vintage, a touch of firmness remains in this still-young wine, a sign of its present quality and future promise. Thus the need for decanting to bring out this substantial wine’s soft, gentle tannins and to promote a pleasant, creamy impression on the palate.

The finish is clean and lively, with lingering, atypical notes of coffee.

Lacking neither personality or promise, this is better than its status as a second wine suggests..

The bouquet begins with attractive aromas of tobacco and licorice which are typical of Cantemerle. On the palate the wine is long, lively and refreshing, showing the fine character the Médoc’s Cabernet achieved in 2006. The first impression is forthcoming and the finish is ongoing.

The wine’s deep, dark color immediately displays its youth and potential. The nose, while still somewhat  reserved,  nevertheless  shows  hints  of  spices  and  blackcurrant  aromas  which  will become more pronounced with time. On the palate the attack is both ample and firm: very ripe tannins immediately cover the mouth, and pure, clean fruit aromas create an impression of great opulence. An underlying liveliness delivers a fresh and firm finish. 

This wine is clearly a product of the 2005 vintage, the finest that Bordeaux has seen in a very long time, and a distinguished elegance displays the influence of its terrior. Those who prefer young  wines  will  find  great  pleasure  here,  especially  if  decanting  is  done  one  hour  before service;  however,  an  additional  two  or  three  years  of  further  aging  will  bring  out  a  fuller expression of the wine’s charm and subtlety.

This was the year of the “great heat wave”, leading one to expect wines lacking in harmony and freshness. This is not the case here: although this wine is not yet at its peak, it displays a pleasant balance and a charming, fruity character. It would be best to wait until 2007 to begin appreciating it fully, taking care to decant the wine before service. Until then, we can take pleasure in tracking its evolution and note its youthful appeal as it accompanies a veal roast with mushrooms. Satisfaction guaranteed.

This wine, still somewhat closed but with an enviable potential richness, should be decanted gently. Aromas of toast and oak emerge slowly before the wine reveals a smooth and silky texture, with very soft tannins devoid of harshness. Impressions of spice envelope the palate, leading to a fresh finish. A distinguished and flawless wine.

Wine and food recommendations

Distinguished and subtle, Cantemerle’s wine is not lacking in power. It accompanies many traditional local foods like cepes and roast poultry. Its delicate character also makes a satisfying match for finer river fish (pikeperch, char, trout) as well as shellfish like scallops and lightly sautéed crayfish tails.

With cheese, it’s best to avoid the too-salty blue types and instead choose pressed, raw-milk varieties like Reblochon, Saint Nectaire, Cantal, Ossau-Iraty and Manchego. As for the ever-popular Camembert from our Normandy region, a good cider would be preferable. Finally, if the meal concludes with dessert, a very young, fruity vintage of Allées de Cantemerle goes well with a Black Chocolate Parfait or a Hazelnut Tart.

In any case, the serving temperature should not exceed 19°C. It can even be brought to 16°C to accompany seafood and the dessert cart.
